Madras meatballs with fresh herb yoghurt dip

Not only are these meatball skewers fun to make, you'll have dinner on the table in no time. They taste amazing with a bit of char from the barbecue, but can just as easily be popped on the grill for an easy weeknight dinner.
Ingredients
600g Quality Mark beef mincei
2 eggs
beaten1 onion
finely diced1/2 cup fresh breadcrumbs
2 Tbsp madras curry powder
A pinch of salt
A pinch of black pepper
4 spring onions
chopped into 3cm pieces1 red capsicum
chopped into approx. 3-4cm pieces1 red onion
chopped into 3-4cm pieces
200g yoghurt
Plain, unsweetened1/4 cup mint leaves
choppedA pinch of white sugar
1/2 cup parsley
chopped
Method
Combine the mince, eggs, onion, breadcrumbs, curry powder, half the parsley, salt and pepper.
Shape into 3cm meatballs.
Thread onto cocktail bamboo skewers, alternating with pieces of spring onion, capsicum and onion.
Cover and chill until ready to barbecue or grill.
Mix yoghurt, mint, the remaining parsley and a little sugar to make a dip.
Cover and chill until ready to serve.
Barbecue or grill the meatballs until cooked thoroughly, about 8-10 minutes, turning a couple of times.
Serve with the yoghurt dip.
